Peanut Butter Buckeye Balls – A Crowd Pleaser
This is a recipe I received from my mother in law and it is definitely a “go to” treat for any big occasion. Everyone LOVES buckeye balls. I have tried these treats from many other people and their recipes but this is by far the best version I have ever tasted. These are creamy, substantial to eat and absolutely delicious.
Buckeye balls are definitely a treat that I feel like there is no way in the world I would ever have enough willpower to say no. I might be able to have just one but to say “no” – would never happen.
Ingredients
(1) 18 ounce jar of peanut butter (we always use Skippy)
2 cups graham cracker crumbs
(2) 12 ounce bags of chocolate chips
2 sticks of butter
(1) 16 ounce box of confectioners sugar
Directions
Melt your chocolate chips in a double boiler or in a chocolate melting pot. You may need to add a little shortening to get it to the proper consistency. I actually have a couple chocolate melting pots – it makes the process a great deal easier and the kids are more willing to help.
In a bowl mix everything else and form it into small balls. It helps to place the balls in the refrigerator for 15 minutes before dipping in chocolate. Remove from the refrigerator and immediately start dipping them in chocolate then place each one on a cookie sheet lined with parchment paper.
When the chocolate has hardened, the balls are done. My mother in law will actually melt some parafin in with the chocolate to add to their beauty and hardiness but I opt to not add in the parafin. It is a personal preference.
You can also use white chocolate chips – as you see in the photo.
