Deliciously Gorgeous Cake Balls

I recently bought this…Bake Delicious Cake Pops Pan!

So today was the day to make them.  I didn’t feel like spending all day at the barn today.  The thing is – I have had a toothache for a few days and today has made me miserable.  Plus today was a bit of a dreary day, eventually becoming quite rainy.  So, I did the minimum possible for the horses and came home and hung out with the dog and cooked…

First, you need a box of cake mix.  The instructions say to use a box of cake mix with one more egg than the recipe calls for; instead of using water – use milk, and only half of what the box calls for plus a box of pudding.  These changes make for a much more dense cake.

We used strawberry cake mix and cheesecake pudding mix.  Basically you fill the lower half of the pan with the cake mix; place the upper half on top; lock it in place and cook.

Problem is they don’t tell you just how full to fill the bottom portion.  I assumed I needed to use the entire cake batter.  But no matter what I did I couldn’t fit all of it in the bottom half.

Snap on the top and cook for about 20 minutes.

Well – apparently that was just too much batter… This was what the outside of the upper pan looked like.  Total eruption out of the pan.

Now that’s more like it!  Once I removed the cake balls from the pan, I dipped them in melted white chocolate and sprinkled on colored sprinkles.  I placed them in the refrigerator for an hour and voila!
