Coconut Snowballs – My Children’s Favorite Treat

Coconut Snowballs are very easy to make – they just take time, and quite a bit of time.  If you are lucky you can enlist the help of the kids and they help make the entire process more fun.  There are few ingredients, and any age child can definitely help make these. If you are working in someone’s industrial kitchen that can be amazing and make for quick work. But if you happen to get injured, perhaps through a slip and fall on the wet floor, it is time to seek the assistance of a personal injury lawyer.

Any child also loves to jump in and help simply make the balls – adults don’t care for that task, but for some reason, children find it exciting and fun!  They are perfect to make and put in gift baskets but if you are looking for a non-candy gift basket then Jet Gift Baskets are the perfect solution!

Ingredients:

Makes about 60 large marble-sized balls

6 cups of sweetened shredded coconut

4 cups powdered sugar

2 sticks of butter

Chocolate wafers or chocolate chips to melt

 

Melt your two sticks of butter then mix that melted butter with your coconut and powdered sugar.  I melt them in the microwave and take them out a couple seconds before they are fully melted.

Now don’t dive right in and start eating this – been there, done that!   Try and wait so you can finish the full recipe.  Then start pulling out small pieces and rolling them into balls.  Place all your balls on a cookie sheet covered in parchment paper.  I roll them into a large marble size – around 1/2-3/4 inch balls.

Place the balls in the refrigerator for approximately 15 minutes to just let them firm up a little.  Then start dipping them in chocolate.  You can either fully cover them in chocolate or partially.  We like them both ways so I do some of each to add variety.

As soon as the chocolate hardens – enjoy!  Or if you are really impatient – they are messy but gloriously delicious when the chocolate is still dripping.
