Chili – Vegetarian Style
This site contains affiliate links to products. We may receive a commission for purchases made through these links. One of our favorite meals that everyone loves in our house is chili! I make it at least once a month and it often varies but is always vegan. Although I am vegan, no one else in the house is but this is one meal we all agree on. I will start by saying I use a 10 quart slow cooker – I can easily freeze some for later plus have plenty for us to eat for days! The best thing is that it takes really no extra work for 10 quarts…

Keto Crack Chicken – Crockpot Fun
This post contains affiliate links I am always looking to try a new recipe that is Keto Friendly. I want our family to follow a low carb way of eating as much as possible and to do so – I need to keep them interested. Much of my cooking is done on the weekend and I always try to make enough for our family of five as well as enough to freeze for later in the week. So this weekend we are trying Keto Crack Chicken and I can tell you it was a huge hit. I followed (basically) the recipe from Mess for Less with some minor variations. What could…

Keto Friendly YUMMY Stromboli
This post contains affiliate links How do you feel about the very popular Keto diet? I found my way to it after watching on the sidelines as my friends started to lose large amounts of weight. Now I am hooked – and so is my husband. Sure we cheat every now and then but the progress is pretty steady weight loss. The bread is the thing I miss most. I didn’t eat a ton of bread before – even then I mostly ate hamburgers without a bun and stuff like that. But it is the pizza and stromboli stuff that leaves me feeling like I am missing something. Before –…

Baby It’s Cold Outside – Time To Make Some Keto Friendly Chili!
I recently transitioned to Keto and love it. I had visions before I started of the Atkins days of old. I hated Atkins – I felt so deprived all the time so it was bound to not last. Sure I lost weight – and quite a bit of it. But it really wasn’t sustainable. With Keto though I am seeing awesome results and don’t feel deprived at all. I can literally eat anywhere – I just need to modify what I normally order and it doesn’t need to be salad with no dressing! Some of my favorite Keto things are protein shakes with low net carbs. Best way to start…

The Ultimate Comfort Food – English Muffin Pizzas
What is your comfort food? When I was growing up we spent a great deal of time with our cousins and that meant 8 kids and 4 adults! These outings bring back fond memories for sure such as: Scouring the landfill for “stuff” to make anything we wanted to make Snowmobiling – sort of, and cracking up Very little sleep Swimming Fitting 8 kids into a Cadillac with a St Bernard so we can all go swimming Picking wild blueberries Walking, walking and more walking – just because When you have to prepare food for that many people on a frequent basis, there are certain foods that fit the bill…

Vans Gluten Free Rotini and Red Sauce
My kids love pasta – but their medication has also caused them both to gain weight – significant and unhealthy amounts of weight. We have not completely transitioned to gluten free but we are much closer to it than we ever were before. This gluten free Rotini and Red Sauce by Van’s is my kids’ favorite meal to date. I am more than happy to oblige their love of this meal because it is easy to make and we don’t have dinner battles. The pasta itself is red – the first time we made this the color caught me off guard. But we forged on –…

Parmesan Oven Crusted Potatoes
Okay so who here doesn’t LOVE potatoes! Believe it or not my kids were not the biggest fans until each were about 8 or 9. I can’t imagine what took them so long. To be fair though we don’t cook a ton of potatoes – the whole limiting carbs business. Gone are the days of potatoes with every meal, the way I grew up. Now it seems to be a rare treat. Preheat the oven to 375 degrees Fahrenheit. For this recipe I used small red potatoes and cut them up into chunks. You could probably use any potatoes but I really love red potatoes. …
